Our 5 Favorite Dishes from Kayu: Kitchen + Bar

Whether its the peculiar names or contrasting ingredients, a trip to a new restaurant often brings the biggest question of all – ”What to order?” 

Situated right at the heart of the city, Kayu Kitchen + Bar rests in a quite and humble neighborhood of 32 Sanson, Rockwell. Surrounded with greenery and a pool deck for that fresh ambiance, Kayu brings heat on the dining table. 

Sounds overwhelming? Don’t fret, we have listed the dishes to have on your first (or second) trip to the restaurant just for you. 

1. Duck Confit

Duck isn’t popular meat of choice among Cebuanos. But a hearsay claims this dish might just change that. The perfect crisp of the duck goes hand in hand with the soy bean cassoulet’s creamy texture. And when finished with the strawberry based cabbage and cilantro, the mix of sweetness and fragrance of the two pulls the meal without fail. If there is one dish you must try, this is it. 

 2. Glazed Salmon

They say it’s hard to mess up salmon. But when it’s this great, it’s even harder to pass. The glazed salmon is topped over sushi rice cake and bokchoy. Later finished with a helpful varnish of teriyaki sauce. The understated balance between the teriyaki and salmon seemingly pulled the dish altogether simply, yet satisfyingly. 

3. Braised Shortrib

The braised short rib is a beautiful sight. At taste, it is heavenly. Lightly fried and later stewed over low fire, the short rib is one you can cut with your tongue. It is THAT tender. Laid on a bed of cornbread puree, topped with a braised shallot and pooled with a demi glaze, this is a top-notch.


4. Beetroot Salad

At Kayu, a salad is a color frenzy and a party in the mouth. Sweet and interestingly flavoured, the goat’s milk ricotta, beetroot and orange slices are carefully aligned over tzatziki and guava gel. Dressed in Garam Masala vinaigrette, it makes eating healthy a little bit more fun. 

5. Sizzling Caramel Bar

Whoever said desserts are best served cold is proved wrong, once again. Served on a sizzling skillet topped with vanilla ice cream and banana drizzled with caramel sauce, the Sizzling Caramel Bar pulls together that thrill from pouring of the caramel sauce to the devouring. We can never say no to this.
