I’ve decided to try a hand at blogging and what better way to get acquainted with you all than by sharing a spread of my favorite truffle dishes from spots right here in the heart of Cebu. Since the time of the Greeks and Romans, truffles have been consumed as a delicacy, aphrodisiac, and even as medicine. Its scarcity and alluring fragrance paved its path to becoming one of the world’s most expensive natural foods. 

Chicken Breast Stuffed with Truffle Butter from BISTRO ECILA

A hearty meal at a welcoming price, Bistro Ecila offers a chicken special for the season. Butter infused with white truffle cream is stuffed inside a chicken breast fillet adding a distinct delicate woody flavor to the dish without over powering it. Its light crust goes perfectly with a side of mashed potatoes with sour cream. (PHP 268.00)

Tagliatelle Ai Pinoli con Profumo di Tartufo Nero e Gorgonzola from PIZZERIA MICHELANGELO

Chef Massimo la Magna skillfully interprets this traditional Italian dish, bringing in elements and imported ingredients encapsulating the different regions of Italy. A reduction of glucose is used to balance the sharp tang of the Gorgonzola cheese and the balsamic vinegar at the corners allows diners to experience a different flavor on the same plate. (P400)

 

Mushroom and Cheese Truffle Croquette and Fish in Truffle and Lemon Cream Sauce from THE CORNER TABLE

Chef Johann Young starts your meal with a bang, serving a delectable wild mushroom with truffle oil croquet. This light but filling tapa is perfect for anyone cutting down calories during supper. (PHP 380.00) For heavier eaters, ignore the guilt trip with an equally healthy and aromatic fish fillet with a tangy sauce that will leave you licking the plate clean. (PHP 530.00)

 

Truffle Fries from IRIE GASTROPUBLIKO

The classic thick hand-cut double-fried potato French fry is infused with truffle oil to make the perfect pair for a nightcap or a boys’ night out at Irie. For early diners, it serves as great side dish to their Irie Burger or their Buffulo Wings. (PHP 200.00)
